Custardy Gluten-Free Brioche French Toast Bites

Ingredients

  • 4 Canyon Bakehouse brioche hamburger buns
  • 2 cups whole milk
  • Juice of 1/2 orange
  • 4 large eggs
  • 2 Tablespoons sugar
  • ¾ teaspoon kosher salt
  • 1 teaspoon pure vanilla extract
  • 1 to 2 Tablespoons unsalted butter as needed
  • 1 Tablespoon Confectioners' sugar for serving (optional)
  • 3 Tablespoons maple syrup

Instructions

  • Slice each bun in half, then slice each half into 8 triangles like a pizza. In a medium bowl, whisk the milk, orange juice, eggs, sugar, salt, and vanilla until combined.
  • Pour the mixture into a large, shallow bowl and distribute the brioche slices in the mixture, occasionally gently pushing them down to soak until they are well saturated, 15 to 20 minutes.
  • In a large, heavy-bottomed skillet, melt 1 tablespoon butter over medium heat. Working in batches, place the brioche slices in the bubbling butter in a single layer. Reduce the heat to low and cook until the brioche is just golden brown, 3 minutes on each side.
  • Transfer to a serving platter, sprinkle with powdered sugar and maple syrup, and serve with toothpicks or a large spoon.

Notes

Halve the recipe to serve 8 (or make 4 pieces of French toast).
Freeze cooked leftovers and warm them in the oven next time you want a breakfast-y treat!

With a drool-worthy crispy-cookie-like base (that can be repurposed for pretty much any bar) and a tangy-sweet topping, this sure-thing recipe by our pal (four-time champ of Food Network’s “Cupcake Wars”) Kyra Bussanich is spectacular and intense, so a little goes a long way. Cut the bars small and stack them prettily for a crowd-pleasing presentation. Or take it over the top by serving it warm with a scoop of vanilla ice cream.

For the cookie bar base:

1 cup (8 ounces) butter, browned and cooled completely

1 tablespoon fresh rosemary

1 cup sugar

1 cup millet flour

1 cup sweet white rice flour

1 cup tapioca flour

1/2 teaspoon salt

 

For the Cranberry Compote:

12 ounces fresh or frozen cranberries

3/4 cup sugar

1 cup orange juice

2 tablespoons chopped candied ginger

1/3 cup dried cranberries

 

Make the cookie bar base: In a small pan, brown the butter over medium heat and let cool to room temperature (butter will solidify, but will be brown and smell nutty. Don’t skip this step: it provides a lovely deep flavor!

Preheat oven to 325ºF. Spray a 13 by 9-inch casserole pan with gluten-free pan spray and line with parchment baking paper. Set aside.

In a food processor, blend together the fresh rosemary and the sugar to finely chop the rosemary and release the oil into the sugar.

In the bowl of a stand mixer fitted with a paddle attachment, beat the cooled browned butter on high speed until light and creamy and then add the rosemary sugar. Beat until fluffy and creamy and several shades lighter.

In a small bowl, mix together the millet flour, sweet white rice flour, tapioca flour and salt and then add half the flour mixture into the butter-sugar mix. Mix on low speed until mostly combined and then stop the mixer and scrape down the sides of the bowl. Add the remaining flour mix and combine on low speed. Press two-thirds of the cookie base into the baking pan, reserving the remaining third of the dough. Bake until lightly golden brown and set to the touch, about 45-50 minutes.

Meanwhile, make the Cranberry Ginger Compote: In a deep skillet, heat the frozen cranberries with the sugar, orange juice, chopped candied ginger, and dried cranberries over high heat until the liquid boils, the sugar dissolves, and the frozen cranberries burst open. Drop the heat to medium-low and continue to stir occasionally until the mixture thickens up, up to 15 minutes.

Spread the cranberry compote over the baked cookie bar base and dot the top with crumbles of the remaining third of the cookie dough.

Bake until the cookie top is lightly golden brown and hard to the touch, 25 to 30 minutes.

Let cool completely before cutting.

Gluten-Free Apple Chestnut Tart with Salty Caramel

There's so much to love about this tart, starrting with the super simple but totally delicious press-in crust. While it calls for chestnut flour, you can substitute with more almond flour. Then there's the filling. Guess what--it's apples sprinkled with sugar. That's it! Yes with or without the finishing caramel sauce, it's stunning to the eye and the taste buds. If you’re short on time or crave a more traditional finish, skip the caramel and brush the tart with a few tablespoons of apricot jam loosened with a few drops of water, heated, and strained. Best the day it's baked, the tart will keep at room temperature for 1 day but leftovers may be stored in the fridge for up to 2 days.

Ingredients

FOR THE CRUST:

  • 1⁄2 cup blanched almond flour such as Bob’s Red Mill
  • 1⁄2 cup sweet white rice flour
  • 1⁄2 cup chestnut flour
  • 2 tablespoons tapioca flour
  • 1⁄4 cup granulated cane sugar
  • 1⁄4 plus 1⁄8 teaspoon kosher salt
  • 6 tablespoons cold unsalted butter, cut into 1⁄2-inch cubes
  • 1 teaspoon pure vanilla extract

FOR THE FILLING:

  • 5 tart firm baking apples (1 3⁄4 pounds; such as Granny Smith or Belles de Boskoop) peeled
  • 1⁄4 cup granulated cane sugar
  • 3 tablespoons unsalted butter in small pieces
  • 1⁄2 cup Salty Vanilla Bean Caramel Sauce see below, at room temperature or warmed

Instructions

Make the crust:

  • In the bowl of a
stand mixer fitted with the paddle attachment, combine the almond, sweet rice, and chestnut flours with the tapioca flour, sugar, and salt. Scatter the butter pieces over the top and drizzle with the vanilla. Turn the mixer to medium-low and run until the butter is completely integrated, 3 to 5 minutes. (If the dough doesn’t come together, work it with your hands.)
  • Transfer the crumbs into a 9-inch
tart pan with a removable bottom
and press the dough firmly and
evenly into the pan, starting with the sides and then moving to the bottom. Prick the bottom of the crust all over with the tines of a fork and freeze until firm, 15 to 30 minutes.
  • Position a rack in the center of the oven and preheat to 350oF. Line a rimmed baking sheet with parchment paper and place the tart pan on it.

Make the tart:

  • Cut the flesh off each apple core in large chunks, cutting close to the core (alternatively, halve and core the apples). Cut each chunk into slices as thin as possible, about 1⁄8-inch thick, keeping the slices stacked together and discarding the rounded edges. Fan the slices out lengthwise slightly and place them, cut-side facing the center of the tart, around the outside of the shell, tucking the last apple under the first to make a continuous loop. Repeat with a second layer just inside the first, reversing the fan if you like, and continue until you’ve filled the tart, tucking in as many of the extra pieces as you can; the apples will reduce a lot as they cook. Sprinkle all over with the sugar and dot with the butter.
  • Bake the tart until the tips of the apples are bronzed and the fruit is bubbling furiously, 65 to 75 minutes. There’s a fine line between cooking the apples all the way and burning the crust. Watch and remove the tart early if the crust becomes too dark. Let the tart cool for 1 hour, then drizzle all over with the caramel sauce and serve warm or at room temperature.

SALTY VANILLA BEAN CARAMEL SAUCE

Ingredients

  • 3⁄4 cup heavy cream
  • 1 vanilla bean split lengthwise
  • 2 tablespoons corn syrup or honey
  • 1 cup granulated cane sugar
  • 2 tablespoons unsalted butter in a few pieces
  • Flaky sea salt such as Maldon

Instructions

  • Pour the cream into a small saucepan with a lid, scrape the seeds from the vanilla bean into the pan, then add
the vanilla bean pod and heat over medium heat until steamy, swirling the pan occasionally. Remove from the heat, cover, and let steep.
  • Pour 1⁄4 cup water into a heavy- bottomed saucepan. Add the corn syrup, then carefully pour the sugar into the center of the pan. If any sugar crystals stick to the sides of the pan, brush them down into the water with moistened fingers. Cover and cook, without stirring, over medium heat until the sugar is dissolved, about 3 minutes. Uncover and continue to gently boil, without stirring, until the mixture turns a deep amber, gently tilting the pan to encourage even caramelization. This will take only a few minutes; watch the pan carefully toward the end and reduce the heat to low if needed.
  • When the mixture turns a dark
amber, remove the pan from the
heat, immediately swirl in the butter, then gently and slowly whisk in the cream mixture. Return the pan to low heat and whisk gently to dissolve
any hardened caramel. Strain into a heatproof bowl and let stand, stirring occasionally, until cooled. Stir in
1⁄2 teaspoon flaky salt, crushing any extra-large bits between your fingers, and season to taste with more salt.

By the 17th century, these confections arrived in Mexico, likely brought by European nuns or conquistadors. They quickly found a home in celebrations, particularly weddings, symbolizing happiness, purity, and unity with their delicate dusting of powdered sugar.

Today, these wedding cookies remain a nostalgic taste of tradition. For gluten-free baking, this recipe keeps the flavor but loses the gluten by using brown rice flour and tapioca flour to make them a delicious and inclusive treat for everyone to enjoy, regardless of dietary restrictions.

Mexican Wedding Cookies

Flaky, light, and buttery, these tea cookies by the great Heather Hardcastle of Flour Craft Bakery are the perfect combination of salty and sweet, which, in our option is the difference between good polvorones and great polvorones. Take note: the dough needs to rest at least 2 hours before you shape and bake it. Also, you can easily make these vegan by swapping regular butter for vegan butter.

  • 2 cups pecan pieces
  • 1 1/2 cups brown rice flour
  • 1/2 cup tapioca starch
  • 1/2 cup sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon xanthan gum
  • 1 teaspoon ground cinnamon
  • 14 tablespoons 1 3/4 sticks unsalted butter, cubed
  • 1 cup powdered sugar

Instructions

  • Combine the pecans, flour, tapioca starch, sugar, salt, xanthan gum, and cinnamon in a food processor. Process until the mixture resembles coarse meal and no large chunks of pecans remain. Add the butter all at once and pulse until the mixture forms into a dough.
  • Divide dough in half and shape into disks. Wrap in plastic and chill until firm, at least 2 hours, and preferably overnight.
  • Preheat the oven to 350°F. Pinch off 1-tablespoon pieces of chilled dough and roll between your hands to form balls. Space the cookies 1 inch apart on parchment paper–lined baking sheets. Chill the balls until firm, about 10 minutes.
  • Bake until cookies are set in the middle and just golden brown around the edges, 15 to 18 minutes. Cool completely, then roll cookies in powdered sugar until fully coated.

Vegan Berry Bars

Ingredients

  • 1 1/2 cups gluten-free rolled oats
  • 3/4 cup brown rice flour
  • 6 tablespoons tapioca starch
  • 2/3 cup lightly packed brown sugar
  • 1/2 cup walnuts chopped small
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 3/4 cup 1 1/2 sticks Earth Balance Vegan Shortening, softened slightly
  • 1/2 cup raspberry jam
  • 3/4 cup frozen raspberries or blueberries

Instructions

  • Preheat the oven to 375°F. Spray a 9-by-9-inch baking pan with nonstick spray. Press in a piece of aluminum foil that fits up to the rim, then press in a piece of parchment paper of the same size.
  • In a large bowl, stir together the oats, flour, tapioca starch, sugar, walnuts, salt, baking soda, and cinnamon until well combined. Add the shortening and combine, using your hands, until the mixture is homogeneous and holds together when pressed.
  • Firmly and evenly press 3⁄4 of the mixture into the prepared pan. Spread the raspberry jam evenly onto the dough, leaving a 1⁄2-inch border on all sides of the pan (to aid in unmolding). Top with the frozen fruit. Sprinkle the remaining crumble mixture over the fruit, leaving some fruit peeking through.
  • Bake for 35 minutes, rotate the pan, and bake for another 10 to 15 minutes, until evenly golden brown and well set. Chill completely before cutting and serving.

Whole Meyer Lemon Tart

This to-die-for dessert by our dear friends at Flour Craft Bakery in Marin County, California, gets its gorgeously lemony taste from Meyer lemon, which is blended, peel and all, into the filling mix. Use the spectacular, easy to make gluten free tart crust for any sweet tart you please!

Ingredients

  • 1 recipe for Sweet Pastry Crust Dough chilled (see below)
  • Brown rice flour for sprinkling
  • 1 large Meyer lemon about 4 ounces, skin on cut into 8 pieces
  • 1 ¼ cups (8.9 ounces) sugar
  • 1 stick 4 ounces butter
  • 1 tablespoon vanilla paste or gluten-free vanilla extract
  • 4 eggs

Instructions

  • Preheat the oven to 350°. Place the pastry crust dough between two pieces of plastic wrap and roll it into a 10-inch disk, ¼-inch thick. Remove the top piece of plastic wrap, lift the dough and remaining wrap, invert it over a 9-inch tart pan, and position the dough to fit the pan. Peel off and discard the remaining plastic wrap and trim the dough edges with a paring knife. Top the dough with a piece of parchment, fill it with a layer of dried beans or baking weights, and bake for about 15 minutes, rotating halfway through, until the crust is blonde around edges and just set in middle. Remove the beans and parchment paper.
  • Put the Meyer lemon (peel, seeds, and all), sugar, butter, vanilla, and eggs into blender and blend until smooth, 3 to 5 minutes. Pour into the tart shell and bake for about 40 minutes or until just set in the middle, like custard. If the top begins looking dark during cooking, tent it with foil. Cool to room temperature and serve.

Sweet Pastry Crust

One of the easiest and most delicious GF tart crusts we’ve come across, this can and should be your go-to for all your spring- and summer-dessert tarts! For pies, you’ll need to roll out the dough, place it in a pie tin, weigh it down with parchment paper and dried beans or baking weights, and par-bake at 350°F for 15 minutes before adding and baking with fillings. For galettes, you can just top the raw dough with sliced, macerated fruits and then bake.

  • ½ cup (2 ¼ ounces) millet flour

  • ½ teaspoon xanthan gum
  • ¼ pound (4 ounces or 1 stick) unsalted butter cold and cubed

Add the egg and mix until the mixture resembles coarse meal. Add ¼ cup very cold water and mix until dough comes together. Chill for 10 minutes before rolling out for easier handling.

Ingredients

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 3/4 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed brown sugar
  • 2 eggs
  • 1 teaspoon gluten-free pure vanilla extract
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 cup sweet rice flour
  • 1/2 cup brown rice flour
  • 1/2 cup cocoa powder
  • 2 cups bittersweet chocolate chips
  • Fleur de sel sea salt (optional)

Instructions

  • Preheat the oven to 325°F. Line 2 baking sheets with parchment paper.
  • In the bowl of a stand mixer, cream the butter, peanut butter, and sugars for 3 minutes on high speed. Add the eggs and vanilla and combine, scraping down the sides of the bowl.
  • In a medium bowl, sift together the salt, baking soda, flours, and cocoa powder.
  • Mix the dry ingredients into the butter mixture and fold in the chocolate chips. Scoop a heaping tablespoonful of dough at a time and place 2 inches apart on the prepared baking sheets. Gently press down on the mounds to create a flat top, sprinkle with fleur de sel, then bake until the cookie tops just start to crack, 15 to 18 minutes.

Masala Beluga Lentils with Roasted Baby Beets

Ingredients

  • 12 baby beets
  • 1 1/2 cups beluga lentils small black lentils
  • 1 teaspoon kosher salt
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar or other vinegar
  • 1 tablespoon garam masala
  • Small handful of mâche or baby salad greens for garnish (optional)

Instructions

  • Preheat the oven to 375°F. Place the beets and 1⁄4 cup water in a small roasting pan, cover with foil, and roast for 40 to 50 minutes, or until the beets are just tender to the touch. Cool and peel the beets with a paring knife, and then cut each beet into quarters and set aside.
  • Meanwhile, combine the lentils and 3 cups of water in a small saucepan over medium heat. When the water boils, reduce the heat to a low simmer, add the salt and olive oil and cook, uncovered, stirring every 5 minutes, for 15 minutes, or until the lentils are still firm and intact, but starting to be creamy inside.
  • Drain any excess water, stir in the vinegar and garam masala, remove the pot from the heat, and transfer the lentils to a bowl to cool. If desired, add more salt, oil, vinegar, or garam masala to taste, then transfer lentils to a serving dish, garnish with the beets and greens, and serve warm or cold.

Ingredients

  • 3⁄4 cup unsalted butter, cut into pieces
  • 1⁄2 teaspoon kosher salt
  • 1 1⁄2 cups your preferred gluten-free flour mix (we like Cup4Cup)
  • 4 large eggs
  • 1 recipe Vanilla Pastry Cream (below) or 1 pint vanilla ice cream

  • 1 recipe Chocolate Ganache (below), warm, or any GF chocolate sauce

Instructions

  • In a heavy saucepan over high heat, bring to a boil 1 1⁄4 cups water, the butter, and salt. Lower the heat to medium. Add the flour, remove from the heat, stir vigorously to combine, then return to the heat, stirring, for 1 minute.
  • Transfer the batter (a.k.a. pâte à choux) to the bowl of a stand mixer fitted with the whisk attachment. Let cool for 10 minutes. Beat in the eggs, one at a time, on high speed, until combined after each addition. Don’t worry if the batter is clumpy, like scrambled eggs, at first; it will come together. After the final egg has been combined, beat for 2 minutes more. 
  • Preheat the oven to 425°F. Line two baking sheets with parchment paper. 
  • Using a #40-size cookie scoop or a tablespoon, scoop about 24 (1 1⁄2 tablespoon) mounds onto the prepared baking sheets, leaving 1 1⁄2 inches between mounds. Bake in upper third of the oven for 10 minutes. Reduce
the temperature to 400°F and bake 20 minutes more. Remove from the oven. Using a skewer, poke 1 (1⁄4-inch) hole into the bottom of each puff to release steam and help retain crispness, then return the puffs to the turned-off oven for 30 minutes. Split each puff in half to make top and bottom pieces. 
  • Scoop a heaping tablespoon of pastry cream onto each bottom piece, add a top piece, drizzle with chocolate ganache, and serve.

Chocolate Ganache

Optional corn syrup ensures this chocolate sauce stays shiny. Use it right away or refrigerate, covered, for up to 3 weeks, then reheat before use.

Ingredients

  • 6 ounces (about 1 heaping cup) chocolate chips
  • 1 teaspoon light corn syrup optional
  • 6 ounces heavy cream

Instructions

  • Place the chocolate chips and corn syrup in a bowl.
  • Heat the cream in a small saucepan over moderate heat until it just begins to bubble around the edges, but does not develop a skin.
  • Pour the cream over the chocolate chips and stir until smooth.

Vanilla Pastry Cream

Pastry cream can be made up to 3 days in advance and refrigerated, with plastic wrap sealing its surface then covered.

Ingredients

  • 2 cups whole milk
  • 1/2 cup sugar divided
  • 4 large egg yolks
  • 1⁄4 cup cornstarch
  • 1/8 teaspoon kosher salt
  • 1/2 teaspoons pure vanilla extract
  • 2 tablespoons unsalted butter at room temperature

Instructions

  • Pour the milk into a heavy-bottomed saucepan. Sprinkle in 1⁄4 cup of the sugar, letting it sink, undisturbed, to the bottom. Without stirring, bring the milk to a very gentle simmer over medium heat, 5 minutes.
  • In a medium bowl, whisk together the egg yolks, cornstarch, remaining 1⁄4 cup sugar, and the salt. 
  • Whisk the hot milk mixture, then gradually whisk it into egg yolk mixture. Return the mixture to the saucepan and cook over medium heat, whisking constantly, until the pastry cream simmers and thickens, 2 to 3 minutes. Remove it from the heat, then whisk in the vanilla and butter until smooth. 
  • For smoothest results, pour the pastry cream through a fine-mesh strainer into a bowl, using a rubber spatula to gently force it through. Cover the pastry cream with plastic wrap directly on its surface to prevent a skin from forming. Refrigerate for at least 4 hours.

But you can halve it or store unused cookie dough, wrapped in parchment paper then aluminum foil in a ziplock plastic bag, in the freezer for 3 months and pull it out anytime you want instant homemade-cookie gratification. We recommend using a light-colored saucepan when browning the butter because it’s easier to see how dark the butter is getting.

  • 1 1/3 cups unsalted butter
  • 1 cup brown rice flour
  • 3/4 cup white rice flour
  • 1 cup oat flour
  • 1 cup buckwheat flour
  • 3/4 teaspoon xanthan gum
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 2 eggs
  • 6 ounces cream cheese softened and cut into small pieces
  • 1/2 teaspoon vanilla paste or gluten-free pure vanilla extract
  • 1/2 teaspoon lemon zest
  • Your favorite Royal Icing recipe optional

Instructions

  • Place 1/3 cup of the butter on a plate to soften. Cube the remaining 1 cup butter into 16 even pieces and transfer them to a light-colored saucepan over medium heat. Stir the butter with a rubber spatula, scraping the bottom of the pan as it melts. Once it starts foaming, stir until the foam subsides and the butter begins to turn light brown. Continue to cook until it starts to smell nutty and takes on a slightly darker color, 1 to 2 minutes. Watch to ensure the butter doesn’t get too dark. Remove the pan from the heat and immediately pour the butter into a heatproof container. Cool in the refrigerator, covered with plastic wrap, until solid. 
  • In a bowl, sift together the flours, xanthan gum, salt, baking powder, baking soda, and cinnamon. Reserve. 
  • In the bowl of a stand mixer fitted with a paddle attachment or by hand, cream both of the reserved butters and the sugar until smooth. Mix in the eggs, scraping down the sides of the bowl, then mix in the cream cheese. Mix in the vanilla and lemon zest and scrape down the bowl again. Add the sifted ingredients and mix to combine. Scrape the batter into a bowl, cover with plastic wrap, and refrigerate for 90 minutes or until the dough is firm enough to handle. 
  • Preheat the oven to 325ºF. Line baking sheets with parchment paper. Place the dough between 2 pieces of parchment paper and roll 1/4 inch thick. Cut cookies using a cookie cutter dipped in a neutral GF flour before each cut. Bake until the cookies are just start to color on top and are golden brown underneath, 12 to 15 minutes. Cool completely and decorate with royal icing.
