Absolutely you can. It will be richer/creamier. No need to adjust eggs. If you want to thin it a bit, you can add a little water to the cream, keeping the same final amount.

This pumpkin pie is truly amazing! I made it for Thanksgiving, and it was the best pumpkin pie I’ve ever eaten. We used Bob’s Red Mill GF Pie Crust mix (because I had it on hand), but next time I’ll try this crust recipe too. But don’t skip this pumpkin pie recipe. It’s a revelation!
