No, Gluten Free Meister is not a household name in Japan — yet. This newish brand is the brainchild of Kobayashi Noodle, a Japanese noodle family business since 1947. While they’d been mastering ramen noodles for decades, development of gluten-free ramen noodles began around 2004. It was at that time that the then-president (the current president’s father) embarked on a journey to help a friend who suddenly developed a wheat allergy. No one was thinking about gluten-free noodles in Japan at that time, so he forged his own way, turning to a Japanese staple — rice — to help create safe, high quality noodles for his friend to enjoy.

There were many trials and errors that led to today’s Gluten Free Meister gluten-free ramen noodles. But thank goodness they stuck it out, because these beauties rival the flavor texture of traditional wheat-based options, are void of the top eight allergens (you won’t find any dairy, eggs, fish, shellfish, tree nuts, peanuts, wheat, or soy in these noodles), and are made from non-GMO Japanese rice, plus potato starch, water, kelp-derived alginic acid ester, vitamin B2 for color, and modified starch.

Gluten-Free Ramen Flavors

With their recipe for gluten-free ramen noodles perfected, they turned to rich and glossy broth flavorings, creating three, one of which is vegetarian and two are vegan: 

  • Tonkotsu: Rich and creamy with nearly white, cloudy broth, this pork bone broth flavor is epic — and vegetarian. 
  • Miso: A robust and savory soybean paste flavor that’s just as good — and vegan. 
  • Shoyu: The classic soy sauce flavor — gluten-free, of course —  showcasing a clear brown broth that’s a staple in Japan. It’s also vegan. 

Like regular instant ramen, you just boil the noodles, rip open a liquid flavoring packet, dump it into the ramen cooking water, stir, and devour. The bit of noodle starch that thickens the water it boils in only makes for richer, more luxe flavors: think layered, elegant, and umami-delicious ramen like the ones you might find at popular ramen restaurants. No worries if you prefer thinner broth: just boil and strain the noodles, pour 1 -1/4 to 1 -1/2 cups hot water and the soup base into a soup bowl, add the strained noodles, and enjoy!

Bonus: soup bases don’t have any weird, undecipherable ingredients. Take the tonkotsu flavor for example. Its broth is made from water, creaming powder, fermented rice seasoning, salt, hydrolyzed vegetable protein, gluten-free soy sauce, flavoring oil, vegetable oil, sugar, yeast extract, brewed vinegar, napa cabbage extract powder, garlic, ginger, caramel color, guar gum, seasoning, modified starch. As a side, this is the only one that contains some dairy; the others are vegan.

Buckwheat Flour Facts
Overview: Buckwheat isn’t related to wheat at all and is naturally gluten free. Native to northern Europe and Asia and available in charcoal- and lighter-colored flours, it hails from the pyramid-shaped seeds of a plant related to rhubarb and sorrel. Whether the flour is lighter or darker depends on whether the seeds were ground raw (lighter) or toasted (darker).

Buckwheat is grain-free and is not a grass like wheat–it is considered a “pseudocereal” since it is a complex carbohydrate and used like a cereal in recipes.

When buying buckwheat, look for certified gluten-free brands since buckwheat not processed in a GF-certified facility may have some risk of cross-contamination during processing.

Though an alternative “it” flour, buckwheat has been enjoyed since the eighth millennium BCE and commonly stars in French savory crepes, Japanese soba noodles, Eastern European kasha, and American pancakes.

Flavor: Robust, assertive and earthy, slightly grassy and herbaceous, with subtle notes of cinnamon, roasted hazelnuts, and chocolate. Some people also report tasting mild mushroom, “hoppy” and pleasantly bitter notes.

Uses: Buckwheat flour helps to create light and foamy, mildly earthy-tasting pancakes; firm, slurpy noodles that hold up well to many Asian sauces; and soft, dense cookies. When baking with buckwheat flour, for best results, do not over-mix batter and use buckwheat flour for only up to one-quarter to one-half of the total flour amount in a recipe (perhaps use a GF flour blend for the rest). The flavor profile of buckwheat pairs especially well with dried fruits, chocolate, warm, earthy spices and brown sugar.

Feel: Soft, starchy, delicate, usually non-clumping

Nutrition: High in protein, iron, zinc, and other minerals, as well as the amino acid lysine, buckwheat is said to prevent canker sores. Buckwheat is also high in protein and fiber and B vitamins. In traditional Chinese medicine, buckwheat is reputed to have warming properties and aid digestion.

Availability: Widely accessible in health-food stores and well-stocked grocers

Storage: Keeps refrigerated in an airtight container for up to one year

The secret to successful, fast, delicious cooking has as much to do with a prepared, properly -stocked kitchen as it does using great recipes. Our friend Peggy Curry, co-founder of wonderful Curry Girls Kitchen and author of the gorgeous cookbook Damn Good Gluten Free, shows how it’s done with her KIND method (Kitchen Improvements to Nourish Daily) for easier, healthier meal making. Your ticket to practical ways to alleviate meal-prep stress and up the joy of healthy, delicious cooking and eating, it all starts with a little organizing and planning, and includes easy recipes worth making.

Ready? As Peggy says, it’s as easy as one, two, three:

1. Declutter 
2. Replenish
3. Meal Plan 

Step 1: Declutter 
A fast-working kitchen is an organized kitchen. To set your kitchen up for success, you have to know what you really have. Plus, you want to ensure that what you DO have is the highest quality version possible. This is to give yourself a solid foundation to work from every time you set foot in the kitchen. Start by going through your pantry, fridge, and spice drawers, and check those labels. Toss low-quality ingredients for tastier higher quality ones. 

  • Let’s start with an easy one: TOSS all expired or oxidized products. Products such as oils, nuts, and seeds that are over their due date and just smell bad. Oxidized also can be rancid. 
  • For my gluten intolerant/Celiac friends, double check that nothing contains wheat, barley, rye, or any of their derivatives, such as spelt or farro. Most oats are a no-go, too, unless you can eat gluten-free oats. If any products contain these grains, give them to your gluten-eating friends or DONATE to a food bank. 
  • Now, let’s level up. Check labels for additives, dyes, or low-quality oils *. If some of your favorite products contain such ingredients, take note to look for higher-quality versions in the next step. For now, either DONATE or start to phase these products out over time so their loss doesn’t feel dramatic.

*Additives, dyes, and low-quality oils include added sugars,  HFCS/High fructose corn syrup, MSG, artificial food coloring/dyes, artificial sugars, nitrates, and words that are hard to pronounce or mysterious. Low-quality oils include hydrogenated oils, and genetically modified oils (such as canola, vegetable, cottonseed, soy, artificial trans fats, and highly heated/fried fats).

Step 2: Replenish
Restocking your pantry after a declutter can be an exciting yet daunting step. Remember to only buy what you actually need. Focus your shopping on finding the highest quality version of your everyday staples. This again means no additives, dyes, GMOs, or low-quality vegetable oils. For now just make a list of what to replace. Once you’ve done the next step, you can replenish while shopping for your next meals!

Step 3: Meal Plan 
You can really save time, stress, and even money by planning out the week’s dinner in advance. No more worrying “What am I going to cook tonight?” or scrambling to the grocery store at the last minute. With a good meal plan, you only need to shop once a week. And since you’ll know exactly what you need to buy, your over-shopping days will soon become a thing of the past. This not only saves you time and money, but it also means less food waste.

This eliminates decision fatigue, allows for adding in lots of variety, and builds your kitchen confidence because you can rely upon a formula. You’ll never be bored because every night is a new culinary adventure. Plus, it’s a great way to involve your partner or your roommates or your kids. Everyone can collaborate to pick nightly themes that vibe with the household.

Here’s what a sample week could look like: 

Mediterranean Monday: In many areas, Tuesdays are local farmer’s market days. This means Monday nights are the perfect time to use up all leftover produce to make room for new recruits. Italian food is a perfect vehicle for this. Pasta, risotto, or a simple green rice with veggies… or (the kids’ favorite) Cheesy Pasta Bake always tastes extra good loaded with tons of veggies. 

Taco Tuesday: Who doesn’t love tacos? Plus, they’re so versatile they can include any combination of vegetables, meat, and seafood. Whether hosting a crowd or cooking with leftover lunches in mind, Taco Pie is the ultimate Tuesday meal.

Wild Fish Wednesday: A visit to the fish counter at the store or your fish monger at your farmers market the day before makes fish on Wednesday easy peasy. Of course with fish, freshness is key, so buy it and cook it! If you’re not a big seafood fan, try this Hazelnut-Crusted Fish It’s made converts out of even the pickiest eaters. 

Veggie Thursday: It’s nice to have at least one day a week to focus on vegetables. Minimizing meat consumption is great for the planet and the wallet. Plus, it’s pretty cool to have a couple great vegan/vegetarian recipes under your belt, for when you end up hosting guests with different dietary needs. Who’s not up for a Baked Potato Night of fun loaded with lots of topping options (think grated cheese, steamed broccoli, chopped green onions, sour cream, and more)! 

One-Pot Friday: Fridays are perfect for a “set it and forget it” kind of affair. One-pot/one-sheet slow cooked meals are ideal for this. Here are a few recipes to get you started

Weekend Party: This one is kind of a wild card as we tailored each weekend around our activities and entertaining family and friends. I planned it so that we wouldn’t carry stress over into our weekend plans and activities. Who doesn’t love burgers and pizza. Especially to fit everyone’s food preferences! We made these two meals our family’s go-to for the weekends. However, in Damn Good Gluten Free, Pegs shares many recipes in her weekend chapter for inspiration. Having a little more time, you can gather friends and family for the ultimate BBQ, picnic or dinner that might take a little more time in preparation, but good leftovers for a meal during the week.

THE FIRST BONE BROTH I EVER TASTED was made by Armida, a ninety-six-year-old sharecropper that I was documenting in the Lunigiana region of Italy. Earlier that morning, Armida had killed one of her prized chickens, stuffed it with bread and borage, and cooked it whole in a large pot. Later in the day, after its meat had been carved, the carcass went back into the pot, along with its head and feet, for a slow simmering in water. She said the resulting broth soothed her aching joints, and that it was also good for nursing mothers, children, and anyone with a sore tummy. It was a perfect example of how traditional elders know the practical health benefits of food, and how to put nothing to waste; the remains of a meal or butchering invariably ending up as a delicious broth that then becomes the basis for more meals—and nutrition.

People have been simmering bones, often along with meat scraps, vegetables, roots, and herbs, for centuries. In fact, humble bone-based broths, and the closely related stock, are the foundations of traditional and haute cuisines, homemade sauces, soups, stews, and braises, all around the world.

The inspiration was likely more than flavor. Leading nutrition education organization Weston A. Price Foundation says the health benefits of bone broth range from helping fight off a cold to improving skin and athletic performance to healing the digestive tract after a round of antibiotics or a celiac diagnosis. With that reputation it’s no wonder chicken soup is commonly called “Jewish penicillin.”

Armida and the millions of preindustrial home cooks before her knew what Weston A. Price Foundation president Sally Fallon explains in her book, Nourishing Traditions. Along with being an excellent source of calcium, magnesium, and potassium, the gelatin naturally imparted in bone broth is successful in the treatment of many intestinal disorders, and collagen aids rheumatoid arthritis.

Better still, it offers a kind of healing that’s available to anyone with access to a pot, water, a few animal bones, and a way to simmer them over low heat for an extended period of time. Beyond that, very little needs to be added to make a bone broth complete. A small amount of vinegar should be included to help pull the nutrients out of the bones and make them easily assimilated when consumed. But everything else is optional— and only sweetens the nutritional pot; fresh or cooked meat, or meaty bones, can be added for extra protein, naturally gelatin-rich feet or knuckles can be thrown in to boost gelatin levels, and a variety of vegetables, roots, seaweeds, and herbs can contribute flavor and a range of additional health benefits.

Dr. Lindy Woodard, an expert in pediatric integrative medicine in Mill Valley, California, explains another reason bone broth has stood the test of time and culinary evolution and should become part of your culinary repertoire: “My direct experience is that everyone tolerates it. The sickest kids, the leakiest guts, the most inflamed joints…it works for everybody, and makes everybody feel good. I can’t think of anything else like this, other than water.”

Basic Bone Broth

There are two main benefits to making your own broth. The first is culinary; compared to even the highest-quality store-bought broth, a homemade one has more flavor. The second is price; buying it can be expensive, while making your own leverages leftovers you’d otherwise throw away. You can make bone broth on the stovetop, in the oven, or in a slow cooker (the best way to go if you don’t want the smell of broth wafting through your house; you can purchase one with a vapor seal, which holds in aromas, or plug it in in a closed room or garage). Most important is that you use bones from healthy, organically or pasture-raised animals, which tend to have more mineral- and nutrient-dense bones and will make for a very healthful bone broth. Don’t be daunted by the long cooking time involved in making bone broth; you can make a big batch at one time and freeze much of it, making subsequent meals much easier and more delicious. You will want to prepare your broth unsalted to allow for more control if you use it later in other dishes. Regardless, all bone broths are delicious to drink when simply seasoned with a little garlic, fresh herbs, and a pinch of salt. They also form the basis of wonderful sauces, stews, soups, and the liquid for braising meats and vegetables. Once prepared, bone broth can be stored in the refrigerator for up to a week, or in the freezer for up to six months.

Ingredients

  • 3 to 4 pounds bones preferably with some meaty parts (see the bone chart below for options)
  • 2 tablespoons vinegar
  • Optional additions: onion peels carrots, celery, garlic, ginger, turmeric, kombu, or dried mushrooms

Instructions

  • In a large pot, combine the bones, vinegar, and any optional additions with 6 quarts of water and slowly bring to a gentle boil over medium heat. Skim off any foam that rises to the top, reduce the heat to a low simmer, and cook for the amount of time indicated in the chart below, based on the type of broth you are making. When the cooking time is complete, strain the broth through a fine-mesh sieve.

December 5: Some of My Favorite Kitchen Essentials

In the kitchen, I’m the opposite of a gadget girl; I stock up on only essential items I need and use regularly. When possible, they’re also lovely to look at and very affordable. I thought I had my latke recipe squared away: squeeze out the water from the grated potatoes and fine-grated onion, use potato starch instead of flour as a binder, add egg and lots of salt, and fry in enough hot oil to get crispy exteriors and soft, fluffy interiors.  Ta-da: the best latkes.

Then I talked to my friend Craig Stoll.

Craig is the James Beard Award-winning chef behind the beloved San Francisco restaurant, Delfina. He’s also the guy who, along with his wife/partner, Anne, sold more than 1,000 local orders of his insanely good dozen pre-cooked frozen latkes in the first five days they were offered.

I quickly learned there are more steps that can be taken to get to the best latkes. 

Craig uses russets, egg, potato starch, and salt, too. But he also puts his whole, unpeeled russet potatoes into a pot with water, brings it to a boil, drains the potatoes the literal second the water begins boiling, then refrigerates them overnight. He swears this preliminary step not only prevents oxidation of the potatoes to a large degree but also makes them dryer and easier to work with — there’s literally no water to squeeze out! He also blots his grated onions on paper towels after adding them to a fine strainer and pressing out as much liquid as possible. 

His oil of choice? Rice bran.  

Follow his tips and you’ll have the ultimate creamy-crisp latkes every single time.

Here are a few other tips worth following, fresh from the gffmag.com kitchen:

Latke-Making Tips

  • Stick with russet potatoes. Their high starch content makes for the best latkes!
  • Follow Craig’s advice: bring whole, unpeeled russet potatoes and cold water to a boil, immediately drain and refrigerate until cold. It’s the ultimate game-changer.
  • Use either the large-hole side of a box grater or a food processor with the grater attachment to grate the potatoes (and carrots and/or beets or other vegetables, if using).
  • Grate the onions super-fine with the small-hole side of a box grater.
  • Always remove as much water as possible from your grated vegetables, including onions. There’s no need to do this with potatoes if you boil then chill them first. But you’ll want to transfer your grated onions to a fine-mesh sieve and press out as much water as you can. Don’t have time to boil and chill potatoes, grate and wrap them in a clean kitchen towel and squeeze out the excess water by twisting the towel as hard as you can. 
  • Use potato starch instead of a GF flour as a binder. If you capture your potato water when you drain them, then let it sit, you can even pour off the water and be left with usable potato starch! But store-bought potato starch is great, too.
  • Use a flax egg or other vegan egg substitute if you want vegan latkes. They work perfectly. 
  • Go heavy on the salt. Latkes need it!
  • Add salt just before cooking; salt inspires the vegetables to release more water. Last-minute salting stops the batter from getting wetter before cooking. 
  • Cook latkes in an oil with a high smoke point. Latkes take time to cook, and they need an oil that allows for patience. Follow Craig’s lead with rice bran or reach for canola or peanut. 
  • Cook latkes in enough oil that they’re halfway submerged. This ensures crispy results plus more fully cooked interiors. 
  • Make sure the oil is super hot before adding your dollops of latke batter. If you have a thermometer, you can check the oil to make sure it is about 375°F.
  • If you need to add more oil as you go, make sure to heat it to temperature before adding more latke batter. 
  • Drain your fried latkes on paper-towel-lined baking sheets and keep them in one layer in a warm (200°F) oven as you make the next batch.
  • Latkes are best eaten right out of the frying pan, but they do freeze well. To do so, spread the latkes in one layer on a baking sheet and freeze for 1 to 2 hours. Place latkes in a zip-top bag with parchment paper between layers and remove as much air as possible. Freeze, then, when desired, reheat on baking sheets in 350°F oven until lightly sizzling.

I don’t load up on every cooking utensil and machine so I can more easily make zoodles or panini. Instead I stick with good-quality basics — the essentials — for easier, safer cooking. However, there are some cooking gadgets I consider essential. Here I share with you some of my favorite things beyond great cooking vessels and knives. FOR COOKING

Giant Tweezers

I learned about these from one of our wonderful recipe testers, who used them when working in a Michelin-ranked San Francisco restaurant kitchen. They give you way more dexterity than everyday kitchen tongs, allowing you to gently turn hot items (Hello, bacon!) in the pan or remove them to a plate. When I found out they’re under ten bucks, I ordered a pair immediately! Get it here

Handle Sleeves

I love love love these. You only need to grab a burning-hot handle once to know why a sleeve is critical. With these in the kitchen, you’ll get in the habit of sliding one on after removing any hot pan from the oven or cooking with a full stove and lots of heat sources. Plus, they’re super cheap. Elegant Spoon Rest

It’s embarrassing how many years I spent in the kitchen without something to rest my messy wooden and stainless spoons on. Once I got a spoon rest, it became an essential allowing for me to minimize my mess, even though I’m a messy cook! Get it here

Lemon/Lime Squeezer

Citrus is expensive! It’s also sometimes hard to squeeze. This gadget helps get the most juice out of lemons and limes while keeping out the pesky seeds. Get it here

Iron Fish

How often have you been concerned with an iron deficiency? For me, it’s not as rare as I’d like. That’s where this cute little fish comes in handy. Pop it into your soups and stews and it will release some supplemental iron into your meals. Clean it and tuck it away and it’ll be ready to be reused. I dare say it works swimmingly! Get it here

Bamboo Salt Keeper

A long time ago I was at a ceremony to fill and bury a cooking-related time capsule. Everyone in attendance brought something they thought important to contribute. Famed California-cuisine pioneer Alice Waters was there and contributed a container of salt, explaining how important salt is as to amplifying the flavors of food. She’s right. Salt can turn a blah dish to an Aha! dish with a quick sprinkle and stir. This sweet little eco-friendly bamboo salt keeper makes sure you have this magical ingredient close at hand. Paring Knife Set

My amazing editor, Cindy Rice has this color-coded set and uses it every single day. The knives are the perfect size when you don’t need your big clunky chef’s knife. The serrated one is perfect for slicing peppers and tomatoes. The sharp middle one is great for hard or soft cheeses, and the small curved one works well for hulling strawberries and slicing soft fruits like peaches. Plus they’re so cute! Guittard Semisweet Chocolate Chips

KitchenAid Artisan Series 5 Quart Tilt Head Stand Mixer with Pouring Shield 

This beauty is a workhorse that every home cook should have. It does everything from mixing, whipping, kneading and more to even making pasta or grating with additional attachments.
